Deyrolle the Taxidermist is one of the more idiosyncratic shops in Paris. If you happen to be in the 7th arrondissement, it's worthwhile calling in to have a look at their huge collection of stuffed animals, birds, insects, etc. With tigers, polar bears and other animals roaming in the shop, it feels more like a natural history museum.
